Almost Instant Ramen


We’re four days into the New Year and I’m already feeling under the weather with a little sore throat and a runny nose. Wonderful. Luckily, the gals over at A Beautiful Mess shared their recipe for Quick & Easy Homemade Ramen that I tweaked just a bit to suit my sore throat and runny nose cravings.

I dubbed my version “almost-instant” since I used instant ramen noodles that I had on hand for these completely expected bouts of laziness. One thing I wish I had done was cook the noodles separately to prevent the broth from getting starchier, so I added that into the directions here. Another thing, if you’re craving a spicier soup than just a savory broth, don’t be afraid to have a much heavier hand with the chili oil and crushed red pepper. My mom (hi mom!) always said that spicy foods clear a runny nose.

Almost Instant Ramen (adapted from A Beautiful Mess)
Ingredients

1 pack of instant ramen noodles (save the seasoning for another time)
1 cup water
4 cups chicken broth
1 tbsp. sesame oil
1 tbsp. fresh ginger, minced
3 large garlic cloves, minced
1 tbsp. low-sodium soy sauce
2 tsp. crushed red chili pepper
1/2 tbsp. chili oil
1/2 cup of dried shiitake mushrooms
2 tbsp. white miso paste
2 bunches of baby bok choy
Kosher salt to taste

1. In a large pot, heat your sesame oil on medium heat and lightly sauté your garlic and ginger for 4 minutes. In a separate pot, bring water to a boil  (you’ll use this too cook your instant noodles).

2. Once the garlic and ginger are fragrant, add the water, chicken broth, soy sauce, dried mushrooms, and chili pepper and bring to a very low simmer.

3. By now, your mushrooms should be a bit soft. Make sure that you’re frequently tasting your broth and if you’re looking for more of an umami-flavor, add more miso. If you’re looking for a spicier broth, add more chili flakes and chili oil. Once your broth is to your liking, bring to quick boil, then back down to a simmer.

4.  In your pot of boiling water, add your noodles and cook according to the package’s instructions, which is usually around 4 minutes.

5. Once your noodles are cooked and ready to serve, add the bok choy to your pot of broth and simmer for 2 minutes. Pour some broth and noodles into a bowl and enjoy!
